When you make the decision to start on this low carb keto lifestyle – do you believe that you can get to that ultimate goal? Or are you doing it just for others?

What is your mindset? I’ve been studying about mindset and thoughts and did you know “You are what you think”?

If you are constantly on a “diet” or trying to “lose weight” then you will constantly be on a diet and trying to lose weight. Change your mindset to the positive and say “I am at my perfect weight”. Stop being on a diet which is negative and temporary. Live a lifestyle which is positive and permanent.

Close your eyes and see you in your perfect body! It doesn’t matter if you have 10 pounds to lose or 100 pounds to lose. See you in your perfect body and believe you are already there. Believing is half the battle.

If it helps get a picture of you when you were at what you thought was the perfect weight and you were happy there, put it on the mirror in the bathroom and look at it every day. See yourself in that perfect body.

It isn’t only food that makes us gain weight. It can be our beliefs that hold us there. Belief that “it is hard to lose weight after having a baby” or “as I age I get that middle aged spread” or maybe it’s “everyone in my family is big boned and heavy”. Those are all negative thoughts and you will never lose weight if you don’t change your mindset.

So let’s take a look at our mindset and then make it a habit to see yourself in your perfect body. Maybe you just repeat it over and over again in your mind or you thank God or the universe for having that perfect body. See it and believe it has already happened.

Keto Low Carb Lemon Bars

Keto Low Carb Lemon Bars

Sugar Free at it's best


    Shortbread Crust
  • 2-1/2 cups Almond Flour
  • 1/4 cup powdered Swerve
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil melted
  • 1 large egg (whisked)
  • 1/2 teaspoon vanilla extract
  • Lemon Filling
  • 1/3 cup powdered Swerve (or Monk Fruit)
  • 1/4 cup almond flour
  • 3/4 cup lemon juice
  • 1 tablespoon lemon zest


  1. Preheat oven to 350 degrees F. Line a 9×9 pan with parchment paper, hanging over the sides.
  2. Make the filling first, because it must be ready to go immediately when the crust comes out of the oven. In a medium bowl, stir together almond flour and powdered sweetener.
  3. Whisk in the eggs, lemon juice and lemon zest, until smooth. Set aside.
  4. To make the crust, combine the almond flour, sweetener and sea salt in a large bowl.
  5. Stir in the melted coconut oil, then the egg and vanilla. The dough will be crumbly, but able to be pressed together.
  6. Press the dough into the lined pan. Bake for about 13 to 16 minutes, until firm and golden.
  7. Remove the crust from the oven, and immediately pour the filling over the crust.
  8. Return to the oven for 15 to 18 minutes, until filling is set, but still soft.
  9. Cool completely on the counter, without moving or cutting. Cover and refrigerate for at least 2 hours before slicing.

What Does it Take to Get Started?

Have you ever made a decision one day to do something the next? Like get started on a low carb keto lifestyle? or maybe you want to write a book? or maybe you want to start saving for a new car?

Do you know what it takes to get started?

Most of us think that we have to be motivated to start or have everything lined up perfectly so we can assure we will be successful. Did you know all you have to do is START! Take one step toward whatever your goal is.

According to Mel Robbins – Motivation is Garbage – we are just one step away from being successful or having the perfect body or getting that new car!!!!

If you have issues with starting – just do what Mel does and 5-4-3-2-1 GO. With living a Low Carb Keto Lifestyle – that may be just going to the pantry and donating all the high carb items you find there. What a way to start! Now you will be forced to eat fresh foods!

Before you go out to dinner – take a look at the menu of the restaurant you are going to and decide ahead of time what you will get to eat and then don’t even look at the menu when you get there.

Take one small step at a time. It didn’t take you 5 minutes to put on all the extra pounds so don’t get frustrated when it takes more than 5 minutes to take them off.

Also you can think how your new body will look! And think about that instead of the negative side of being on a diet. That is why we call this a lifestyle. We want everything to be positive.

Set small goals – lower the number of carbs you eat in a meal. Maybe get rid of the pasta first, then the next day get rid of the potatoes. Or maybe it is easier for you to get rid of the sweets first. JUST DO SOMETHING!!!!

Stop being a procrastinator which is a habit – by the way – you cannot be labeled a procrastinator – you just have that habit. So stop that habit. 5-4-3-2-1 whatever you want to do and JUST DO IT!

Tasty treat that's rich in fiber and fat to kill cravings and dissolve fat


  • 1 Tablespoon coconut oil, melted
  • 8 oz extra-dark chocolate
  • 1 cup chunky natural peanut butter
  • 4 ounces cream cheese
  • 2 Tablespoons powdered swerve
  • 1 teaspoon vanilla extract
  • Pinch of sea salt


  1. In double boiler, heat all ingredients until melted.
  2. Spread into greased 8″ square pan; let cool.
  3. Cut into 12 servings. Store in refrigerator.

Attitude of Gratitude!

As we start out 2020 we have discussed setting Goals. One of the biggest things for me is to have an Attitude of Gratitude!!!!

Did you know you are what you think? But to get to where you want to go, you first have to be grateful for what you already have. In relationship to health, you must first be thankful for the current health you have. This allows you to then see where it is you want to go.

Do you want to lose 25 lbs or 100 lbs. First be grateful for where you are right now and say “Thank You”. Then see in your mind or pull out a picture of where you were 20 years ago weight wise and pin it to your mirror so you see it everyday. Then after you say “Thank You” for where you are today, look at the picture of where you want to be and believe that you will get there.

I believe that I am the perfect weight. That takes all the negative connotations out of the picture. I don’t weigh my perfect weight yet, but I can see myself there. Also who is it that says what your perfect weight is? It makes life a lot easier when you aren’t constantly kicking yourself for what you ate!

That is why this is a LIFESTYLE not a Diet! So be thankful for where you are and then see and believe where you want to get to. I do a keto lifestyle to help me get there. I add exogenous ketones to my daily intake as a supplementation so I don’t ever stress about what I eat. Life is too short to always be looking at things in the negative.

Keto Onion Rings

Keto Onion Rings

  • Servings: 2-4
  • Difficulty: easy

Rich, crisp and delicious


  • 1 large sweet onion
  • 1 cup pork rinds, crushed – your choice of flavor
  • 3 eggs, beaten


  1. Slice the onion in 1/4″ slices and rinse. Separate the rings carefully. Save the smaller ones for other dishes.
  2. Dip rings in a bowl of beaten eggs, wait for remainder of egg mixture to drip off back into the bowl.
  3. Coat the rings in your choice of crushed pork rinds.
  4. Dip into egg mixture again.
  5. Coat rings in pork rinds again.
  6. Place in air fryer at 380F for 5-7 minutes.
  7. Tip: Use one egg at a time. You do not want to saturate the egg mixture with the pork rinds for the last pieces of onion rings. Also watch out for maltodextrin on the nutrition labels for some of the pork rinds (especially the hot/spicy ones).
